Seed oils did not exist in the human diet prior to about 1920. They are the most ultra-processed possible things you can consume. This talk changed my life: ▶ this video
Oh, wow -- I love Nina Teicholz! I came across this talk by her a few years ago and it made a massive impression on me: ▶ this video
Just as long as you're aware of the implications of using vegetable oil for your french fries. This lecture on vegetable oils is one of the most memorable lectures I've ever watched: ▶ this video
This video on "Vegetable Oils: The Unknown Story" provides interesting story about the war on fat in the US, by the author of the book "The Big Fat Surprise" [1][2]. According to the author, she was about to name her book "The Big Fat Lie", but eventually decided against it. [1] ▶ this video link

Most of the people are ignorant about the things and fat they put inside their body (that includes me). Please check this video on Vegetable Oils: The Unknown Story by the author of the book "The Big Fat Surprise" [1][2]. [1] ▶ this video [2] link
I have read her book, and it is fascinating. Go ahead and make your assumptions about her motives, but I believe you are doing yourself a disservice. Before the 20th century, we ate a lot of saturated fats, and it wasn't until the creation of vegetable oils (which are made through extensive industrial processes), was there a move to start restricting saturated fat. The current low-fat diet is an experiment that has America has been on for forty some years. Please take a look at this. link And in general, the American population has been following this diet, and we are fatter than ever before, suffering from Type 2 Diabetes. And the "science" behind our current health policy is driven by organizations like the American Soybean Asociation who are more concerned with making money and less on science. And when you start talking about money, the science research will follow the money, because the scientists need to eat. Please take a look at this videos, ▶ this video link I would read her book before you pass judgment.
